We finally made the cookies....

We finally made the cookies we started the other day. They were super easy, so I would recommend them to anyone with kids. It's a great way to use leftover candy canes!!

Here's the recipe:

1 1/2 cups flour
1/2 cup cocoa (Hersheys)
1/2 tsp baking soda
1/4 tsp salt
1/2 cup sugar
1/2 cup brown sugar
1/2 cup butter, softened
1 tsp vanilla
1 egg

Combine flour, cocoa, soda and salt with a whisk. Combine sugars and butter in large bowl, and beat with a mixer until blended. Add vanilla and egg and beat well. Add flour mixture to sugar mixture and beat.

Divide dough in half and roll each half into a 6 inch log. Wrap logs in saran wrap and freeze for at least one hour.

Preheat oven to 350 degrees. Cut each dough log into cookie slices and bake on baking sheet coated with cooking spray for 11 minutes.

Put vanilla ice cream in between cookies, then roll the edge of the cookie in crushed candy canes.
